The AI generally leaves 1 Italian Spearmen by itself to the east. If any skirmishers leave to the north or east of the town square, use the cavalry to run them down, but try to avoid Spearmen with them. There's a small forest just to the north of the town square, move your cavalry there to hide them. I would suggest splitting your infantry and slingers between the east and south, while all the cavalry is deployed north. Most of their infantry can hold out for a while even when outnumbered if you blob straight into the front, and you can't afford that. You need to flank them (attack from the side or rear) where possible, to break enemy units before they can inflict too many casualties.
